Help with quitting a nanny job?

If your underpaid then I'm making slave wages. I make 250 a week for 44 hours. Also I'm not sure where you are but in NY it's illegal for your employers to make you work over 44 hours without overtime. I would just tell them that it's been wonderful working for them, that you really enjoyed spending time with the children but that it's time for you to move on. That you can't afford to receive lower wages and that your sorry they can't work something out. Usually you have to give them some time to find another nanny so be prepared to be treated badly. Be strong on the date though. If you agree on a two week notice and they still haven't found a nanny, maybe give them one more day but that's all. don't let them use you. This is all depending on the relationship you have with them. But in the end, it's your life. Live it how you want.
